Wing Lam started Wahoo Fish Tacos with his two brothers. It’s now expanded into 7 states and 65 eateries. His dishes combine influences from Asian, Mexican and Brazilian cuisine. He grew up in Brazil before moving to California in 1975. Thus the multi-cultural influence. Lam attended San Diego State where his affection for fish tacos grew. Rather than deep fry the fish in his tacos, he charbroils them. His hot sauces are Asian, but his rice and beans are Brazilian.
