4 ingredients – Mussels with Onions and Mushrooms (8 minutes – mussels, onions, mushrooms, and butter).
I wanted more mussels for dinner. Love them. Bought the mussels on 1st Avenue and 79th St. Agata and Valentina NYC. $10. Enough for 2 people.
Super cheap $5 dinner. Well, maybe $7, if you include the onions, mushrooms, and butter.
If you don’t feel like cooking, the French restaurant in NYC that has excellent mussels is Jubilee, 948, 1st Avenue. I always ordered the mussels with Truffle oils. I am super sad I cannot travel. Do tell me your favorite recipe and favorite restaurant anywhere in the world that has the greatest mussels dish. I will travel through your stories and fond memories.
The easy-peasy recipe, so you can enjoy life more:
1. Caramelized the onions with olive oil. (2minutes) Add the mushrooms ($2.59 in any Chinatown) or add whatever fresh mushrooms you like – portabello, enoki, or do without if you hate mushrooms. (2 minutes) Taste as good with just onions.
2. Add butter or not. I try to be good by using olive oil to caramelize the onions, but you can also use butter. More fattening, but why not? Julia Child loved butter and so do I.
3. Add the mussels with 1 cup of water or more if you want more broth. (About 3 – 4 minutes). I only add dry parsley and salt. Do not overcooked the mussels, or it will be tough as rubber. No rubber mussels are allowed.
Literally, you are done cooking, once all the mussels are open.
Yup, no alcohol, and no tomatoes needed. I Never touch alcohol. My friends told me I am naturally drunk with happiness and goodness. 😁
