Lucky 8 minutes dinner – String Beans with Ground Chicken, Scallions, Carrots, and Caramelized Onions.
Honestly, you can make this with just two ingredients. Forget the carrots, scallions, and onions.
Trust me, it will still taste just as good with ground chicken and string beans. Shocking, but true! When your heart is in it, everything tastes delicious.
I did 2 versions of the recipes. I stir-fried the string beans with all the ingredients.
The other, I did with my naked string beans and put the ground chicken on the top.
Yup, I love naked veggies. Personally, I don’t like too much sauce on my veggies or my food. I love to taste every morsel – clean naked food. My neighbor loves stir-fry, so I prepared that version for her. Choose your adventure every day and be a great neighbor.
Met a new gorgeous dog on my walk — Savannah. She looks like a skunk but smells delicious. I❤NYC dogs!!! My late dog Abby was the best dog ever. I miss her. She was Papillon and King Charles mix.

Don’t you just love those cabbage flowers in NYC? I can’t stop admiring how beautiful the cabbage flower as it keeps on blooming. Thank you, NYC building management. Can’t travel due to Covid 19 restriction, so am enjoying NYC.
The recipe:
1. String beans — $2 for an enormous bag @my fave fruit stand — 64th and 2nd Ave. Baby carrots — $1/bag.
2. Caramelized the onions (2 minutes). Add scallions (30 seconds). Add the ground chicken or ground beef/pork/turkey or whatever you have — bacon, sausage, etc. (3 minutes).
3. In another pan, a touch of H2O – boil the string beans. 1 minute. I love crunchy string beans. FYI — cut both ends of the string beans before cooking. Use your kitchen scissors ✂️ or a knife.
4. You can stir-fry the string beans or set the string beans on the plate first, then placed the ground chicken above it. Then sliced the carrots on top.
Vegan or Vegetarian? Use impossible meat, tofu, or lentil. Hate string beans? Use Asparagus or Zucchini.
Remember that you can make 2 ingredients dinner, string beans, and ground chicken. How about that???
