Sunday Sizzle: The tale of two pastas from the Lazy Chef

The most gorgeous mushrooms I have ever seen, in yellow color and also beautiful brownish-gray mushroom. So pretty that you just want to keep looking at it in awes.


I met Adam in Roosevelt Island Green Market. (mushroomqueens.com) He grew the mushrooms himself. Super wow!!!  Nice to meet anyone as passionate about food as I do. OMG, the mushrooms are too gorgeous. My brain was spinning on how I can  honor Mother Nature’s and Adam’s masterpieces. What am I going to cook? I decide to have a cheat day – pasta basta.


The recipe:


1. Cook the pasta (1 pound). I prefer my pasta ala dente. 7/8 minutes.  Add olive oil to the water, so the pasta won’t stick together. (Save 1/2 of the pasta for another pasta recipe below).
2. In another pan, heat the olive oil. Brown the garlic. Remember that garlic is bitter if it is overcooked.  Light brownish is perfect, then set aside.
3. Sliced up the brown mushrooms and sautéed the mushroom in the garlic oil. 
4. You can add the pasta to the mushrooms but I like my food to look pretty. So I put the pasta first on the plate, then the mushrooms, then the cooked garlic, Parmesan cheese + dry parsley. I only add a touch of salt, but you can add black or red pepper.

Second Pasta dish:


1. Heat the olive oil, sauté the mushrooms. Then add the cherry tomatoes.
2. Put the rigatoni on the plate, add the mushroom tomatoes mix on top the pasta then add Parmesan cheese + dry parsley.

There it is, folks – my tale of 2 pasta dinners. One pound of Rigatoni pasta cost me $2.19. The mushrooms $5/each. Well worth it. Cherry Tomatoes .50 cents. Garlic .50 cents.


You can add shrimps 🦐, chicken, ground beef, or salmon. Or add more veggies like sliced thin zucchini, asparagus, or caramelized onions.

If you love dairy, try adding ricotta cheese, fresh mozzarella and tomato sauce in both pasta dishes. I believe the sky has no limits to my gorgeous oyster mushrooms.
